We had tacos last Sunday . Ours are made with ground pork since beef
gives my wife digestive challenges . I always make some "spanish"
seasoned rice when we have tacos ... or fajitters , which we are
having tonight . Because I make enough rice for 2 meals plus a bit
more . Recipes for the rice and fajita seasoning mix on request .

Don sometimes gets confused when shopping. I didn't catch this one
until unpacking. I'd asked him to get me some cottage cheese. He got
me ricotta....
So, faced with a large 16oz container of something I rarely use, I came
up with this:
Ricotta Alfredo with Gai Lan and pasta
2 cups Alfredo (scratch but a jar would work)
2/3 cup Ricatta
2 cups cooked medium shell pasta
2 cups chopped steamed Gai Lan (use vegetable of choice)
Heat Alfredo sauce and add Ricotta then hot vegetables and pasta. Mix
then serve! You can add cooked chicken (canned is an option!) or
andouile slices. S&P at serving.
