    I can download the text, ebook (for kindle), ebook (not kindle), HTML, etc https://www.gutenberg.org/ebooks/3618

    And those textual files can be seen in Apple Books or Apple Documents https://www.gutenberg.org/files/3618/

    But how can iOS convert one of those files into an audible output format?

    Why wouldn't you just use Text To Speech to read it and save that into
    an audio file? I've done that for years for that sort of thing.

    Automated text to speech is always horrible and full of mistakes. You
    would be far better off finding a proper audio book version read by a
    real person - it's available on Audible.com (there's a free trial) and
    other versions on YouTube.

    If you really insist on doing it yourself, then among other options
    there is this method using the free Shortcuts feature:

    As YourName said, anything you can watch on YouTube you can rip the audio
    (or download the entire video but that video isn't anything interesting).

    Even iOS should be able to do something as simple as play an MP3 file.
    Dunno about the epub but you can try using an epub reader.
    iOS must have them.

    The problem will be what iOS always is, which is getting the epub file
    into the epub reader without having to sell your first born to Apple.
