    Title: Dave's Egg Casserole
    Categories: Five, Pork, Cheese, Breads, Chilies
    Yield: 6 Servings

    12 lg Eggs; beaten
    1 1/2 lb Breakfast sausage or diced
    - bacon, or a combination
    16 oz Shredded Cheddar; divided
    7 sl Bread; torn in pieces
    Cholula Hot sauce

    Set oven @ 350+|F/175+|C.

    Brown sausage/bacon in a large skillet over medium-high
    heat. Drain off grease, and set aside to cool. Pour the
    eggs into a lightly greased 9" X 13" baking dish.

    In a separate large bowl, combine the sausage, bread and
    12 oz of the cheese. Mix well and pour this into the egg
    mixture. Top with the remaining 4 ounces of cheese and
    cover with foil.

    Bake for 15 minutes, uncover, and bake until casserole
    is golden brown and bubbly.

    Sprinkle liberally with Cholula when it comes out of
    the oven. Pass the Choula bottle at table so diners
    may suit their tastes.

    Title: Double Bacon & Egg Toasty
    Categories: Sandwiches, Breads, Pork, Cheese, Eggs
    Yield: 4 Servings

    4 lg Pam's Eggs
    4 sl Pam's Rashers Bacon
    1 c Pam's Cheese; grated
    2 tb Parsley, chopped
    8 sl Medium sliced bread
    Salad greens & sliced
    - tomato; to serve

    Lightly beat eggs. Remove rind & grill bacon until
    golden. Chop roughly & stir into eggs with cheese &
    parsley. Place two slices of bread in a sandwich
    maker. Place half the egg mixture over the two slices
    of bread & top with two more bread slices. Cook in a
    sandwich maker until bread is golden. Repeat with
    remaining bread & egg mixture.

    Serve with salad greens (leaf lettuce) & sliced
    tomatoes.

    Serves 4.
