Title: Sweet Potato Cake

2 c Sugar
4 lg Eggs
1 1/4 c Oil
2 ts Vanilla extract
2 c A-P flour
1 tb Pumpkin pie spice
2 ts Baking soda
1/2 ts Salt
3 c Shredded, peeled sweet
- potatoes
1 c Fine chopped walnuts

2 tb Chopped walnuts: garnish
MMMMM-------------------CREAM CHEESE FROSTING------------------------
8 oz Cream cheese; softened
4 tb Butter; softened
1 ts Vanilla extract
2 1/2 c Confectioners’ sugar
Set oven @ 350ºF/175ºC.
Coat a 9" x 13" baking dish with cooking spray.
In a large bowl with an electric mixer, beat sugar,
eggs, oil, and vanilla until well blended. In a medium
bowl, whisk flour, pumpkin pie spice, baking soda, and
salt. Gradually beat dry ingredients into egg mixture.
Stir in sweet potatoes and 1 cup walnuts. Pour into
baking dish.
Bake 40 to 45 minutes or until a toothpick inserted in
center comes out clean. Let cool completely.
To make the Cream Cheese Frosting, in a medium bowl with
an electric mixer, beat cream cheese, butter, and
vanilla until creamy. Slowly beat in confectioners’
sugar until smooth. Spread over cake and sprinkle with
remaining walnuts. Refrigerate any leftovers.
