Title: Copycat Panera Tomato Soup

Yield: 8 servings
2 tb Olive oil
1 md Onion; chopped
4 cl Garlic; minced
56 oz (2 cans) diced tomatoes;
- undrained
1 c Vegetable broth
1/4 c Chopped fresh basil
1 tb Sugar
3/4 ts Dried oregano
1/2 ts Salt
1/4 ts Pepper
3/4 c Heavy whipping cream
Salad croutons; opt
In a Dutch oven, heat oil over medium-high heat. Add
onion; cook and stir until tender, about 5 minutes. Add
garlic; cook and stir 1 minute longer. Stir in tomatoes,
broth, basil, sugar and seasonings; bring to a boil.
Reduce heat; simmer, covered, 10-15 minutes or until
tomatoes and onion are tender.
Puree soup using an immersion blender. Or cool slightly
and puree soup in batches in a blender; return to pan.
Add cream; cook and stir until heated through. If
desired, garnish with croutons and additional basil and
heavy cream.
