Title: Cottage Cheese Biscuits

Yield: 8 servings
2 c Sifted flour
1 tb Baking powder
1 ts Salt
1/4 ts Cayenne pepper
1/2 ts Celery seed
1/4 c Soft butter
1/2 c Cottage cheese
3/4 c Evaporated milk
Set oven @ 425ºF/218ºC.
In a bowl, combine flour, baking powder, salt, cayenne
pepper and celery seed.
Cut butter into dry ingredients with a pastry blender
until the mixture looks like coarse cornmeal.
Add the cottage cheese and milk. Mix with a fork or
wooden spoon.
Turn dough onto a lightly floured board and knead gently.
I recommend having at least 1/4 cup of flour in a small
pile on the side of your board. The dough is rather
sticky right after mixing, and you’ll need to add more
flour while kneading and folding the dough. Add extra
flour, as needed, a little bit at a time, until the
dough just stops being sticky.
Roll dough about 1/2" thick and cut into biscuits.
Bake for 12-15 minutes until brown. Cool for at least 5
minutes, then serve hot, warm or at room temperature.
You can brush them with melted butter right after they
come out of the oven for a little extra richness!
