Title: Tuna Melt On Cornbread

Yield: 6 servings
8 1/2 oz Box cornbread/muffin mix
10 oz (2 cans) light water-packed
- tuna; drained, flaked
1/3 c Mayonnaise
1/3 c Chopped celery
2 tb Fine chopped onion
1 lg Hard-boiled egg; chopped
1 ts Dill weed
1/4 ts Salt
1/8 ts Pepper
6 sl Cheddar cheese
1 md Tomato; sliced
1 md Ripe avocado; peeled, pitted
- sliced
Prepare and bake cornbread according to package
directions, using a greased 8" cast-iron skillet.
Cool on a wire rack.
In a small bowl, combine the tuna, mayonnaise, celery,
onion, egg, dill, salt and pepper. Cut cornbread into 6
pieces; top each with 1/4 cup tuna mixture and a slice
of cheese.
Broil 4" - 6" from the heat until cheese is melted, 2-3
minutes. Top with tomato and avocado.
