    Title: Bratwurst Supper
    Categories: Beef Vegetables, Mushrooms, Potatoes
    Yield: 12 servings

    3 lb Uncooked bratwurst links
    3 lb Sm red potatoes; in wedges
    1 lb Baby carrots
    1 lg Red onionl sliced, in rings
    9 oz (2 jars) whole mushrooms; drained
    1/4 c Butter; cubed
    1 1/2 oz Env onion soup mix
    2 tb Soy sauce
    1/2 ts Pepper

    For each of 2 foil packets, arrange a double thickness
    of heavy-duty foil (about 17" X 15") on a flat surface.

    Cut brats into thirds. Divide the brats, potatoes,
    carrots, onion and mushrooms evenly between the 2
    double-layer foil rectangles. Dot with butter. Sprinkle
    with soup mix, soy sauce and pepper. Bring edges of foil
    together; crimp to seal, forming 2 large packets. Seal
    tightly; turn to coat.

    Grill, covered, over medium heat for 23-28 minutes on
    each side or until vegetables are tender and sausage is
    no longer pink. Open foil carefully to allow steam to
    escape.

    Title: Ralph's Subtly Flavored Bratwurst
    Categories: Sausage, Beer, Vegetables
    Yield: 8 Servings

    8 Bratwurst sausages
    18 oz Rich beer; NOT LIGHT
    1 lb Sauerkraut, either jarred or
    - canned
    1/4 lb Butter
    1 ts Cider vinegar
    1/2 ts (to 1 ts) caraway seeds;
    - bruised in mortar and
    - pestle
    1 ts Brown sugar
    4 Whole cloves

    Prick bratwursts with fork. Open the beer and pour into
    a large pot. Let the beer defoam for about 10 minutes.
    Add the sausages, then bring to a simmer and cook for 20
    minutes.

    Prepare the sauerkraut while the sausages are cooking.
    Drain and rinse the sauerkraut in cold water. Place it
    in a saucepan with the butter, cider vinegar, caraway
    seeds, brown sugar, and cloves. Bring to a boil and
    simmer over very low heat for 10 minutes. Remove cloves
    before serving.

    Heat grill to medium. Grill sausages until golden on
    both sides. Serve with sauerkraut.
