Title: Foil-Baked Salmon

Yield: 6 servings
2 lb Salmon fille
2 tb Butter; melted
2 cl Garlic; minced
2 ts Grated lemon zest
1 tb Minced fresh parsley
3/4 ts Salt
1/4 ts Pepper
6 Lemon slices
Set oven @ 350ºF/175ºC.
Line a 15" X 10" X 1" baking pan with heavy-duty foil;
grease lightly. Place salmon skin side down on foil.
Combine butter, garlic and lemon zest; drizzle over
salmon. Sprinkle with parsley, salt and pepper. Top with
lemon. Fold foil around salmon; seal tightly,
Bake for 20 minutes. Open foil carefully, allowing steam
to escape. Broil 4-6 in. from the heat until the fish
flakes easily with a fork, 3-5 minutes.
