    Title: Eggs Kejriwal
    Categories: Breads, Cheese, Chilies, Vegetables, Herbs
    Yield: 2 servings

    1 tb Softened butter
    2 sl (thick) Pullman bread
    2 ts Mustard
    4 oz Cheddar cheese; grated
    1 Serrano chile; fine sliced
    2 tb Cilantro leaves; washed,
    - chopped
    1 tb Minced red onion
    2 lg Eggs
    Salt & pepper
    Ketchup (opt)

    Butter the bread on both sides, and lightly brown in a
    frying pan (use the pan you like most for frying eggs).
    Smear one side of the toasts with mustard, and transfer
    to a sheet pan, mustard-side up. Turn on the broiler.

    Mix together the cheese, chile, cilantro and onion, then
    split the mixture evenly between the toasts. Place under
    the broiler just until the cheese is melted.

    While the cheese is melting, fry the eggs in the same
    pan you used to make the toast, until the white edges
    are crisp, but the yolks are still soft. Gently loosen
    the eggs from the pan, and slide one on top of each
    toast. Season with salt and pepper, and serve with
    ketchup on the side, if you like.

    Title: Sausage & Crescent Roll Breakfast Casserole
    Categories: Pork, Breads, Cheese, Dairy
    Yield: 12 servings

    1 lb Pork breakfast sausage
    8 oz Tube refrigerated crescent
    - rolls
    2 c Shredded mozzarella cheese
    8 lg Eggs
    2 c Milk
    1/2 ts Salt
    1/4 ts Pepper

    Set oven @ 375oF/190oC.

    In a large skillet, cook sausage over medium heat 6-8
    minutes or until no longer pink, breaking it into
    crumbles; drain. Unroll crescent roll dough into a
    greased 13" & 9" baking dish. Seal seams and
    perforations. Sprinkle with sausage and cheese.

    In a large bowl, whisk eggs, milk, salt and pepper. Pour
    over sausage and cheese.

    Bake, uncovered, 35-40 minutes or until a knife inserted
    in the center comes out clean. Let stand 5-10 minutes
    before serving.

    TO MAKE AHEAD: Refrigerate unbaked casserole, covered,
    several hours or overnight. To use, set oven to
    375oF/190oC. Remove casserole from refrigerator while
    oven heats. Bake as directed, increasing time as
    necessary until a knife inserted in the center comes
    out clean.

    Let stand 5-10 minutes before serving.
