Title: Bombay Rice w/Shrimp

1 1/2 c Uncooked instant rice
10 1/2 oz Can cream of celery soup;
- undiluted
1/2 c Water
2 ts Curry powder
1 ts Salt
1 lb Peeled, deveined, cooked
- (U-40) shrimp
1 md Onion; chopped
1/2 c Chopped walnuts
1/2 c Sweetened shredded coconut
1/2 c Golden raisins
1 sm Tart apple; chopped
Minced fresh cilantro
Lime wedges
Set oven @ 350ºF/175ºC.
Cook rice according to package directions.
Meanwhile, in a large bowl, combine soup, water, curry
and salt. Stir in shrimp, onion, walnuts, coconut,
raisins, apple and rice. Transfer to a greased 11x7-in.
baking dish.
Bake, uncovered, until heated through, 20-25 minutes. If
desired, serve with cilantro and lime wedges.
