    Title: Elena Ruz Sandwich
    Categories: Five, Breads, Poultry, Cheese, Fruits
    Yield: 1 servings

    1 Cuban medianoche roll or a
    - brioche hot dog roll
    2 tb Cream cheese; softened, more
    - as needed
    3 1/2 oz Sliced turkey breast
    1 1/2 tb Strawberry preserves; more
    - as needed
    1/2 ts Unsalted butter

    Slice or split the bread roll in half to fill as a
    sandwich. Spread a 1/3" thick layer of cream cheese on
    the bottom half. Lay turkey neatly on top of the cream
    cheese. Do not overfill the sandwich. Evenly spread jam
    on the top half of the bread and sandwich with the
    bottom.

    In a pan over medium-low heat, melt butter, swirling to
    evenly coat the pan. Place the sandwich bottom side down
    in the pan and press it with a spatula or a cast-iron
    skillet. Heat to warm the sandwich, until the bottom is
    lightly toasted but not burned, 30 seconds to 1 minute.
    Flip the sandwich and repeat with the other side. Remove
    from the heat, cut the sandwich in half at an angle and
    serve

    Title: Shrimp Pasta Primavera
    Categories: Seafood, Pasta, Cheese, Vegetables, Herbs
    Yield: 2 servings

    4 oz Uncooked angel hair pasta
    8 Jumbo (U-15) shrimp; peeled,
    - deveined
    6 Fresh asparagus spears;
    - trimmed, in 2" pieces
    1/4 c Olive oil
    2 cl Garlic; minced
    1/2 c Sliced fresh mushrooms
    1/2 c Chicken broth
    1 sm Plum tomato; peeled, seeded,
    - diced
    1/4 ts Salt
    1/8 ts Crushed red pepper flakes
    1 tb (ea) minced fresh basil,
    - oregano, thyme & parsley
    1/4 c Grated Parmesan cheese

    Cook pasta according to package directions. Meanwhile,
    in a large skillet, saute shrimp and asparagus in oil
    until shrimp turn pink, 3-4 minutes. Add garlic; cook 1
    minute longer. Add the mushrooms, broth, tomato, salt
    and red pepper flakes; simmer, uncovered, for 2 minutes.

    Drain pasta. Add the pasta and fresh herbs to skillet;
    toss to coat. Sprinkle with cheese.
