Title: Redneck Caviar

1/2 c Oil
1/2 c Cider vinegar
1/2 c Sugar
1 ts (ea) salt & pepper
1/8 ts Garlic powder
15 oz Can black beans; rinsed,
- drained
15 oz Can pinto beans; rinsed,
- drained
15 oz Can whole kernel corn;
- drained
2/3 c Diced red bell pepper
2/3 c Diced orange bell pepper
2 Ribs celery; diced
1/3 c Diced red onion
1 Jalapeno; seeded, fine diced
Tortilla chips or Fritos
- scoops as dippers
In a saucepan, combine the oil, vinegar, sugar, salt,
pepper and garlic powder. Bring to a boil and stir until
sugar is dissolved, 2-3 minutes. Remove from the heat
and cool to room temperature.
In a large bowl combine the black and pinto beans, corn,
bell peppers, celery, onion and jalapeno. Pour cooled
dressing over mixture and stir until well coated. Cover
and allow to sit at room temperature for at least an
hour, stirring occasionally. To serve, stir, and using a
slotted spoon, transfer to a serving bowl.
Serve with tortilla chips.
Refrigerate leftovers; bring to room temperature before
serving.
