Title: Cheesy Egg Quesadillas

Yield: 2 servings
3 lg Eggs
3 tb Milk
1/8 ts Pepper
1 tb + 2 ts butter; divided
4 (8") flour tortillas
1/2 c Refried beans
1/4 c Salsa
2/3 c Shredded Cheddar cheese
Sour cream & add'l salsa
Set oven @ 425oF/218oC
Whisk together eggs, milk, nd pepper. In a large
nonstick skillet over medium heat, melt 1 tablespoon
butter. Add egg mixture; cook and stir until eggs are
thickened and no liquid egg remains. Remove from heat.
Place 2 tortillas on a baking sheet. Spread with beans;
top with eggs, salsa, cheese and remaining tortillas.
Melt remaining 2 tsp. butter; brush over tops.
Bake until golden brown and cheese is melted, 10-12
minutes. Serve with sour cream and additional salsa.
