    Title: Onion Liverwurst Pate
    Categories: Appetizers
    Yield: 24 Servings

    1 c Finely chopped Spanish onion
    1/2 lb Liverwurst
    1/2 ts Worcestershire sauce
    1 x Chopped parsley
    1 x Paprika
    8 oz Cream cheese,softened
    2 ts Prepared mustard
    1 tb Milk
    1 x Spanish onion rings,garnish

    Liver & onions? How can you go wrong? Bv)=

    Some crisp cooked, crumbled bacon would not be amiss as an additive.

    Categories: Breads, Cheese, Sausages, Vegetables
    Yield: 4 Servings

    3 tb Mayonnaise
    1 tb Prepared coarse mustard
    2 ts Prepared horseradish
    8 sl Caraway rye bread *
    4 Lettuce leaves
    8 oz Wisconsin Limburger Cheese;
    - sliced
    8 oz Liverwurst; sliced
    2 md Dill pickles; sliced
    - lengthwise
    1 sm Red onion; in rings

    * UDD uses black, coarse rye without the whole seeds.

    In small bowl, mix the mayonnaise, mustard, and
    horseradish; spread evenly on one side of 4 bread slices.

    Top each with equal portions of lettuce, cheese,
    liverwurst, pickles and onion; cover with the remaining
    bread slices.

    Cut each sandwich in half; serve.

    Makes 4 servings.

    Title: Whack A Mole, eh?
    Categories: Sauces, Fruits, Vegetables, Citrus, Chilies
    Yield: 4 Servings

    2 lg Ripe avocados
    1/2 c Diced red onion
    1 c Diced tomato
    1 Lime
    1 1/2 ts Minced garlic
    1/2 ts (ea) coarse salt & fresh
    - ground black pepper
    2 tb Fresh chopped cilantro
    2 tb Freshly chopped jalapeno

    Slice the avocados in half with a medium sized kitchen
    knife.

    Hold one half of the avocado in the palm of your hand with
    the pit facing up.

    Strike the avocado pit with the blade of the knife, twist
    the knife and pry out the pit.

    Using a large spoon, remove the fruit from the avocado
    half.

    Once the avocados have been "peeled," gently mash using
    a fork and spoon.

    Slice the lime and squeeze over the mashed avocados.

    Add the remaining ingredients and mix.

    No moles were harmed in the research and development
