Title: Rice Pudding With Almond Milk

Yield: 4 Servings
60 g White basmati rice
1 1/2 l Unsweetened almond milk
6 Green cardamom pods
50 g Brown sugar
Cooking time: 2 hours
Soak the rice in just enough water for 10 minutes then drain.
Heat the almond milk in a large pan. Crush the cardamom pods and add
their contents discarding the outer shells.
Once boiling, add the drained rice and simmer gently, uncovered, for 2
hours, stirring regularly.
Once the mixture is the consistency of thin porridge, stir in the
sugar and cook for a few more minutes until the sugar dissolves.
