    Title: Beef Stew With Wine And Onions

    65 g Butter (5 tb)
    6 Onions; finely chopped
    150 g Pancetta (5 oz); diced
    600 g Lean stewing stea, such as
    -chuck, (1 lb 5 oz); cut
    -into cubes
    25 g All-purpose (plain) flour
    -(1/4 c)
    375 ml Dry white wine (1 2/3 c);
    -scant
    375 ml Red wine (1 2/3 c); scant
    Salt and pepper

    Preparation time: 20 minutes
    Cooking time: 20 minutes

    Melt the butter in a large pan, add the onions and pancetta, and cook
    over low heat, stirring occasionally, for 10 minutes.

    Stir in the meat, sprinkle with the flour, and cook, stirring
    continuously, for another 2 minutes.

    Gradually stir in the white and red wines and cook over low heat
    until the liquid is almost completely absorbed.

    Season with salt and pepper to taste and serve.
