    Title: Adobong Manok (Chicken Adobo With Turmeric And Coconut Milk)

    Yield: 6 Servings

    2 lb Chicken (1 kg); cut into
    -serving pieces
    1 tb Oil
    1 c Thick coconut milk (250 ml)
    - -OR-
    1/2 c Coconut cream (125 ml);
    -mixed with:
    1/2 c Water (125 ml)
    2 Whole green chilies (siling
    -mahaba); up to 4, finger
    -length
    1/2 tb Fish sauce (patis)

    MMMMM--------------------------MARINADE-------------------------------
    1 tb Fresh turmeric root; grated
    - -OR-
    1 1/2 ts Turmeric powder
    10 cl Garlic; minced
    1/4 c Filipino vinegar (suka) or
    -apple cider vinegar (60ml)
    1/2 ts Salt
    1/4 ts Freshly ground black pepper

    Combine the marinade ingredients in a large bowl, add the chicken and
    mix well. Marinate the chicken overnight in the refrigerator. Drain
    the chicken and reserve the marinade.

    Heat the oil in a saucepan and stir-fry the marinated chicken until
    lightly browned, about 5 minutes.

    Add the reserved marinade and the coconut milk or cream, and simmer,
    uncovered, over low heat until the sauce thickens and the oil
    separates from the milk, about 30 minutes. Add the chilies and season
    with the fish sauce. Stir to mix well and serve immediately.
