Title: Zuccanoes (Stuffed Zucchini)

3 md Zucchini; or summer squash
Butter
1/2 lb Mushrooms; chopped
1 lg Onion; chopped
1 cl Garlic; crushed
2 tb Sunflower seeds
Rosemary
Basil
Thyme
3 Eggs; beaten
1 1/2 c Cottage cheese
1/4 c Wheat germ
3 tb Tamari
1 ds Worcestershire sauce
2 ds Tabasco
1 c Cheddar; grated
1 c Cooked soybeans and/or brown
-rice
Paprika
Cheese; grated; or sour
-cream for topping
Preparation time: 1 1/4 hours, including baking
Slice zucchini in half lengthwise. Scoop out insides, leaving 1/4"
rim so canoe stays intact.
Saute chopped zucchini innards, mushrooms, onion, garlic, and
sunflower seeds in bjutter, seasoned with rosemary, basil, and thyme.
Mix beaten eggs with cottage cheese, wheat germ, tamari sauce,
Worcestershire sauce, Tabasco, cheddar, and soybeans/brown rice. Add
the sauteed vegetables.
Stuff the canoes generously. Sprinkle with paprika.
Bake 40 minutes at 350 F.
Serve topped with extra grated cheese or sour cream.
