I am getting a dmesg error
6.658000] FAT-fs (nvme0n1p1): utf8 is not a recommended IO charset
for FAT filesystems, filesystem will be case sensitive!
Should I be concerned?

Only if You're using that file system with windows 95, or earlier on the same
system as dos based systems didn't support lower case file or directory names.
IIRC that was added in windows 98.
