Can anyone recommend a good way to to do remote admin on an iPad - screen share, remotely install apps, talk the user how things work, help them with problems, etc?
I've used Teamviewer for this on a Mac and it works well, but I'm not sure how well things work on i(Pad)OS. I remember having horrible struggles
doing a similar thing about 10 years ago on Android, and I know iOS is quite locked down, so...
Are there any things that remote access solutions like this aren't able to do? Or unexpected pitfalls?

The only possible way I know of is to mirror the iPads screen to a Mac and remote control that Mac.
If the user has no access to a Mac, than you are out of luck.

There is another way. Just tested it, so I know it works.
1. Connect your iOS device per cable to the Mac.
2. You will be asked, if you trust that Mac. Just confirm.
3. On the Mac start Quicktimeplayer.
4. From the menu choose "New film".
5. You get a little window with a red dot in the middle
6. Next to that red dot is a popupmenu from which you can choose the
attached iOS device
7. Tadaa - you see the iOS screen on the Mac :-)
(If you want, you can start a recording, but since you just want to see the screen, that´s not necessary.)
Easy if you know how to do it. Almost impossible to find out if you don´t.

Correct, but that´s the best you can get.
