I look forward to other answers you may receive!

One of the first things I showed to my elderly sister was how to take a screenshot on her ipad - and then how to sent that image to me by email.
That procedure has bailed me/us out on many occasions over the last five
    years!

The only possible way I know of is to mirror the iPads screen to a Mac and remote control that Mac.
If the user has no access to a Mac, than you are out of luck.

According to the following article the iPad and Mac must share the same
AppleId and WiFi network, so not really an answer - sorry :(

There is another way. Just tested it, so I know it works.

    1. Connect your iOS device per cable to the Mac.
    2. You will be asked, if you trust that Mac. Just confirm.
    3. On the Mac start Quicktimeplayer.
    4. From the menu choose "New film".
    5. You get a little window with a red dot in the middle
    6. Next to that red dot is a popupmenu from which you can choose the
    attached iOS device
    7. Tadaa - you see the iOS screen on the Mac :-)

(If you want, you can start a recording, but since you just want to see the screen, that´s not necessary.)

Easy if you know how to do it. Almost impossible to find out if you don´t.

    Hope it works for you.

Thanks for that. Hope it is of use to Theo.

Thanks, but I think that's screen sharing (as in Teams, Zoom, etc) not
remote control? I can't click on things remotely, which is what you need to
do for remote support. Telling people to click on icons described in words
    is not feasible.

(also, the above doesn't work if the Mac and iOS device are in different places)

Teamviewer have an iOS app ('Teamviewer Quicksupport') but it's quite
limited: you have to start it (OK, fair enough), and then the remote end connects to it, and then the iOS user has to press a 'Broadcast' button
(going through several iOS permission prompts along the way, a potential stumbling block for the user), before the remote end can see anything (and
then it can see everything on the iOS screen). And it's just a screen
share, with no remote control (plus a few bits like file transfer, which I wouldn't need if I could remote control)

If using various Sidecar sharing with the iPad connected to a Mac
(2012 Mac Mini in this case, what are the OS requirements?), can you click
on things on the iPad screen using the Mac mouse? If so I could Teamviewer into the Mac and then use the Sidecar.

Correct, but that´s the best you can get.
As far as I know iOS can´t be remote controlled.

I wonder it’s possible if one jailbreaks iOS / iPadOS? But that’s a very dangerous and probably impractical option here.
