I've just transferred my mum to a new ipad 9th gen - from an ipad air first gen - and I'm confused by the icons regarding deleting emails. The delete icon seemingly randomly isn't always there. Sometimes it's a bin icon and sometimes it's something else, archive maybe? I don't understand why it changes. Her email server is google and accessed via Apple Mail.
Can anyone shed some light please?

It’s the archive icon you’re seeing . If you press and hold the icon you should get the option of archive or delete.

It's due to Google not being a normal email service, and forcing the
default to "archive" not "delete" for most folders (not Junk or All Mail though, they get the Delete bin). It's even worse when you have more
than one mail account and the icons switch around while you browse the
mixed inbox.
Doesn't look like there's a preference to configure, so you'll just have
to put up with it.

It’s the archive icon you’re seeing . If you press and hold the icon you
should get the option of archive or delete.
Of course you can delete an email if you open up the Mailbo and sweep
the unwanted email to the left (sorry if you already know this). Then there’s always the Gmail iOS / iPadOS client!
