The Kindle phone app annoys me intensely by having no fully-bright text
on black background options at all. A muddy yellow is as pale as it
goes. Not to mention the lack of zero-width margins and gutters. It's an
oled screen! Let me use all of it for text!
I do have a physical e-Ink kindle as well, but it's larger than my
pockets.

My Kindle reader v 7.10.0.100 (1.333747) on iOS 17.4.1 on my
iPhone 12 mini has (it seems to me) fully bright white on black
available in 'Layout'.
My 7.10 only has a choice of page colours, white/cream/blue/black, and
when I choose black I get a creamy yellowy colour for the font. No
choices.
Marvin, my usual ereader for non-kindle stuff, has full control
including the zero-width margins I mentioned.
