Leave the SysInternals Process Explorer running, with the System
Information dialog open, when you mouseover the CPU graph it'll tell you
what it was eating the processor at that time, it's not for long-term
logging but it should have a few minutes of history.
Alternatively Performance Monitor (not the baby-brother version called >Resource Monitor that you can launch from Task Manager) and click the "+"
to add cpu/memory counters that are interesting
