• IR thermometers

I wonder about those IR thermometers so prevalent
during the past year.  Previously, I recall seeing them
at deli salad bars, used to monitor the sour tureens.

I understand the physics, the relationship between
spectrum and temperature. What is the accuracy,
considering the problems of focus and reflection,
    and ambient noise?

    What's the internal sensor?

It depends on a lot of things, starting with who made the thermometer.

The accuracy also depends on how it is calibrated, as a medical IR
thermometer calibrated for a human forehead will give different results
    if pointed at anything else.

The general purpose one I have seems to be calibrated for painted
wallboard and gives different results when pointed at metal wall vents
    and human heads.
