It's a long time since you posted this, but hey.
I only know southern Ontario. And only limited parts of that.
And I have no knowledge whatever about off-road jeep activities.
Algonquin is beautiful. No jeeps allowed off the road, but still.
If you are interested in a canoe trip the interior is brilliant.
Getting a little late in the season but still lots of good
paddling days left. If you are into winter camping it's also
brilliant. At least in the snow you don't have to worry about
getting bitten by mosquitoes.
I have also spent a lot of time on the Bruce Trail.

Your best bet for that is to get the guide book and find
interesting places. Because it goes through a highly varied
level of population from quite urban to quite wild, you
should be able to find something that fits your preferences.
Possibly there is a logging trail or some such that will
be of interest.
