Two beautiful arias to me that are so underated and sung
by minor characters in the opera are the aria sung by
Madelon in Andrea Chenier and Voce di donna sung by La
Cieca in La Gioconda. Please list your choices if you
    have any.

    "Source Delicieuse" from Gounod's "Polyeucte"

"Air de l'oasis" from Dupont's "Antar"

Flotow's Martha is full of little gems not named "M'appari" (or, if you prefer, "Ach, so fromm") or Last Rose. The duet for tenor and baritone in the first act is gorgeous if sung right (it needs tons of legato, c.f. Caruso and Journet) and to hear
Caruso sing "Dormi pur, ma il mio riposo" in the 2nd act quartet is to spend three minutes in paradise.
Another great tenor moment is Lionel's solo in the 3rd act finale which Flotow actually added later. Maybe the opera should have been named after him, but then who wants an opera named after a train?
The bass song, the Porterlied is a little gem too but if you don't have a trill, forget about it.
