I like Touhou 5 the most as it has the most polished gameplay out of the
five PC-98 games, a good gimmick (rewarding more risk by encouraging
players to collect point items as close to the top of the screen as
possible) and has really great music (even includes all of the PC-98
games). Touhou 2 comes close for me in the PC-98 era, since despite the poorly aged gameplay (doesn't even have death bombing which is just a
pain), the music is fantastic, with some being better than TH05 in my
opinion (stage 1 and extra stage theme for example) or coming toe-to-toe (stage 4 theme for example).
Though if I'm gonna choose a Windows era game I'd say Touhou 8 for the classic era (seems to be similar to TH05 with TH08 being considered the
peak of the classic era of Windows) since it has again very great music compared to other games (stage 4 is a fucking banger man), and has very
great replayability (so many character options for the main story, the
extra stage, and capturing each spell card and Last Word). For the more modern era, I'd say Touhou 14 for being the least gimmicky and closest
to Touhou 6 (which is also well-received).
P.S. I'm really surprised to see pretty much nobody talking about Touhou
here in Usenet. Not even the japan.* hiearchy has a dedicated newsgroup, which you'd think it would have (even for a short time) considering how Touhou became very popular in the early 2000s in its homeland...

Yeah it's very new and has balance issues but I'm having a blast with it

TH13 is my favorite. Very easy to play with! The resources you get sucks
but if you play well enough (which the less dense bullets would allow
plenty of newbies to do) you should be able to clear the game.

For me it's the scoring. Though I wonder if it's because there are just
so many bullets in so many matches that ZUN decided to just not bother calculating for it
