When the program says Stockfish rating is 3600, what does that mean? From where?

From the rating system of Chess Master prof dr Arpad Elo.
It means Stockfish is REALLY good, and you don't stand a chance
against it.

What about Mittens? Did we have a chance against her/him?!!!

Given that Fischer's top rating was 2780 and a 300 pt difference is
supposed to be a 95% chance of victory it means not only that 'fish'
such as you and me don't stand a chance but top GMs don't either.
I'm suspicious about a claimed rating of 3600 but 3000-3200 wouldn't
shock me. A 600 point difference is thought to mean a 10 game match
score would be 8-2 or better.

So if you beat Stockfish once, you could do it every time.

I had no chance against Mittens... despite its very low [official] ELO.
I only played Mittens as everyone was talking about him/her! Top GM's
did struggle too though so I don't feel too bad.
I did beat the ChessGPT bot though! ;-)

Not surprised on the first point, was not aware the second even
existed.
