irritating when I go back to play a game from a certain position and
keep having GNUBG roll automatically, and it keeps hitting, time after

I don't doubt the number generators are generating some random dice. However, why is the "seed" always reverts to 8? I can change it to something else, but on the next roll I check again and it is back to 8. Also maybe this is just coincidence but it
seems like Gnub gets more "lucky rolls" on a seed of 8, whereas I get either more normal rolls or lucky rolls for myself when the seed is not 8. Hmmmm....

Another thing I do is check who got the most doubles at the end of a match. Most of the time Gnub wins that contest, sometimes brutally. I rarely win that contest. So whereas I get 1 or 2 doubles, Gnub gets 7 or 8 of them. Is this really "random?"

yes and there is no influcence of your moves over dozens of moves. What clever bastards the GnBU guys are, I woul have bet it's 9.
