    Using large 2 10" round flour tortillas. Oaxaca cheese along with some crumbled pepperjack. Cooked on the stovetop in a skillet with a bit of
    hot butter until the cheese is starting to melt and one side of the
    tortilla is lightly browned. Turn using a wide spatula and cook until
    the other side is lightly browned and the cheese is nicely melted.
    Remove the skillet from the heat. Remove the quesadilla to a board, let
    it set a minute then cut it into triangles (kind of like slicing a small
    round pizza).

    If you feel like adding salsa or pico or other sauces, feel free.

    I'm not sure what dinner will be tonight, but I am hungry. I'll scrounge around the kitchen in a little while and see what I come with. Taking something out of the freezer yesterday would have been a wise decision.

    Biden claims he commuted over collapsed Baltimore Key Bridge by train ‘many times’ – but it doesn’t have any rail lines

    President Biden on Tuesday was fact-checked by social media users after claiming that he’s commuted over Baltimore’s Francis Scott Key Bridge “many, many times … either on a train or by car.”

    not a regular thing. I use a combination of lean ground beef and ground
    pork, and oatmeal rather than breadcrumbs. No ketchup slathered on the
    top, either.

    I use bread crumbs soaked in milk. One of the big improvements I made
    was eliminating the ketchup and using a couple tablespoons of tomato
    paste instead.

    Hmm. I've not made meatloaf in ages...
    I think I'll do that this week - but not as a loaf. I'll use my silicone
    muffin pans, and make enough to freeze for later.
    I use barley in mine (I'm allergic to oats), mushrooms, onions,
    tomatoes, celery.
    And no ketchup.
    I may add some pulverised ceci/garbanzos, too.

    I had a quesadilla for lunch yesterday. No butter in the pan. No
    cutting it into triangles. Salsa and lettuce added after it came
    off the heat.

    Dinner tonight... the wife made delicious egg sandwiches. The base was
    spelt bread fried in oil and garlic, with avocado, scrambled eggs and
    fried onions on top.

    I suggested adding bacon but got the evil eye. Still good though! ;)

    I made meatloaf. It was excellent.

    not a regular thing.  I use a combination of lean ground beef and

    Hmm. I've not made meatloaf in ages...
    I think I'll do that this week - but not as a loaf. I'll use my silicone muffin pans, and make enough to freeze for later.
    I use barley in mine (I'm allergic to oats), mushrooms, onions,
    tomatoes, celery.
    And no ketchup.
    I may add some pulverised ceci/garbanzos, too.


    I was looking at my silicone muffin pans the other day and thinking why
    haven't I used them to make mini-meatloafs for the freezer? I do use
    quick cooking oats as part of the binder rather than bread crumbs.

    last one last night.

    With it, baked potato, mushrooms and onions. I've mentioned before, the mushrooms like my grandmother made. When done cooking, stir in a glob

    Seems broccoli is a little touch if the stalk is thick. Been a while
    since I had cauliflower but roasted is very good. Your method sounds

    tough. I still prefer steamed broccoli florets. No big deal.

    I don't make meatloaf frequently and never would thought of putting
    anchovies and Marmite in meatloaf. Have tried to make a free form
    meatloaf several times and went back to baking in a pan. Next time I'll
    do the partial bake in a pan technique. Might even try it with a

    I don't make meatloaf frequently and never would thought of putting
    anchovies and Marmite in meatloaf. Have tried to make a free form
    meatloaf several times and went back to baking in a pan. Next time I'll
    do the partial bake in a pan technique. Might even try it with a
    sillycone muffin pan - portion control and lots of crusty surface area.

    I wouldn't have thought of putting anchovies or Marmite in meatloaf,
    much less gelatin. I do like the partial bake in a pan idea for forming
    the loaf. :)

    I prefer roasted cauliflower over roasted broccoli.  I recently bought a
    nice head of cauliflower and after removing the thick green stems at the
    base, sliced it into about 3/4-inch thick "steaks" rather than cutting it
    into florets.  Brushed each with olive oil combined with fresh lemon
    juice, minced garlic, red pepper flakes and S&P.  Roasted it the oven at
    400F on a lined baking sheet, turning each cauliflower "steak" after
    about 15 minutes and brushing again with the mixture on the other side.
    Lightly browned, tender and delicious!  I'd prepare it this way again.

    I made meatloaf. It was excellent.

    I should probably make meatloaf again soon.  I like it a lot but it's
    not a regular thing.  I use a combination of lean ground beef and
    ground pork, and oatmeal rather than breadcrumbs.  No ketchup slathered >>> on the top, either.

    Hmm. I've not made meatloaf in ages...
    I think I'll do that this week - but not as a loaf. I'll use my silicone
    muffin pans, and make enough to freeze for later.
    I use barley in mine (I'm allergic to oats), mushrooms, onions, tomatoes,
    celery.
    And no ketchup.
    I may add some pulverised ceci/garbanzos, too.


    I was looking at my silicone muffin pans the other day and thinking why haven't I used them to make mini-meatloafs for the freezer? I do use quick cooking oats as part of the binder rather than bread crumbs.

    The last few that I have made that turned out so well were done not done
    in loaf pans. That seems to be the big difference in my method so that
    is what I am crediting for them being so much better.

    I agree, meatloaf is a method and recipes vary with the individual.

    There's a mom-n-pop diner here. Not stellar from the outside but
    really GOOD home cooking. Mama's meatloaf is great! Topped with home
    made brown gravy and sided with real mashed potatoes done a bit lumpy,
    just like I like!
