Because of fossil fuels, hundreds of millions have better and longer and healthier lives... every advance in modern science and technology has
been made possible *only* with the use of fossil fuels...
These five "cornerstones" of our modern era, which started to be used
around 1900 and then really accelerated by the 1920's are:
- the internal combustion engine
- modern chemistry
- modern telecommunications
- modern sanitation (clean water, sewage...)
- cheap and abundant electrical power
Many thousands of people around the world just ****today**** grew out of
dire poverty (whicn is defined by the UN as an income of less than $2.00
per day), and they grew out of that poverty via the use of fossil fuels
to obtain fertizer for their crops, electricity and clean water, modern transportation and communication, etcetera...

When I went to get my first Covid shot at the hospital annex, the
vaccine was new so people were supposed to wait about 20 minutes after
the vaccine before leaving. In case there were any negative reactions.
None that I witnessed. One woman in the waiting area was talking on her
cell phone. She had it on speaker (why do people do that?!) Her >boyfriend/SO/husband was bitching loudly. "Why do you have to wait
there for 20 minutes? Just leave! I need cigarettes, dammit! And
where's my beer? Bring me some beer and cigarettes!" She said she
already bought them but had to wait before leaving after getting the
vaccine.
It was ridiculous and really rather sad. I have no idea why anyone

When I went to get my first Covid shot at the hospital annex, the
vaccine was new so people were supposed to wait about 20 minutes after
the vaccine before leaving. In case there were any negative reactions.
None that I witnessed. One woman in the waiting area was talking on her
cell phone. She had it on speaker (why do people do that?!) Her boyfriend/SO/husband was bitching loudly. "Why do you have to wait
there for 20 minutes? Just leave! I need cigarettes, dammit! And
where's my beer? Bring me some beer and cigarettes!" She said she
already bought them but had to wait before leaving after getting the
vaccine.
It was ridiculous and really rather sad. I have no idea why anyone
would let someone talk to them like that. Get up off your ass and buy

months. I get it from a farmer's COOP. I guess I won't be able to

Josh didn't have any. Don and I were watching his dog, Prince when he
was at work. Then one day he didn't pickup hime so we called and he
said he was really sick and might go to the hospital and asked us to
keep him. Josh never made it home. he was about 34-35, no
preconditions, healthy and a cycler plus ran marathons locally. He
died just as vaccines came out, too late for him.

Lunch _was_ farro, vegetables, and walnuts. I sauteed a garlic

My rub, after coating with mustard, it mostly salt, pepper, garlic, but

You toss that butt into the crockpot and walk away . I lit the fire
at 8:00 , put the butt on at around 8:45 . I was up until almost
midnight getting the temp stabilized - my smoker is getting old and
leaky - and finicky . Up at 3:00 to check temps and adjust a bit , it
was down to about 180°F . Up as usual at 6:15 to put the coffee on and
walk the dog - check temps again and add some more (lump hardwood)
charcoal .
A couple or 3 more checks during the day while I'm machining parts
for a milling machine upgrade . I shut all vents on the smoker around
4:30 to let it cool slowly .
Now , is that slow-cooker butt worth this kind of effort ? IMO , if it
wasn't worth the effort , my wife would be cooking these butts in the
crock pot . YMMV

piece of foil and coat all but the fat side well with rub , then on to
the smoker . I leave the foil under the meat while it's smoking .
I smoke at 200° to 220° around 2 hours per pound . It's ready when
you can pull the bone out clean .

I rinse the meat off and shake off excess moisture . Lay meat on a
piece of foil and coat all but the fat side well with rub , then on

I use brown sugar on brisket too. Lots of black pepper, salt,
granulated garlic.
The local supermarket had a whole brisket but at $87, I passed.

crockpot and walk away . I lit the fire at 8:00 , put the butt on at
around 8:45 . I was up until almost midnight getting the temp
stabilized - my smoker is getting old and leaky - and finicky . Up at
3:00 to check temps and adjust a bit , it was down to about 180°F .
Up as usual at 6:15 to put the coffee on and walk the dog - check
temps again and add some more (lump hardwood) charcoal . A couple or
3 more checks during the day while I'm machining parts for a milling
machine upgrade . I shut all vents on the smoker around 4:30 to let
it cool slowly . Now , is that slow-cooker butt worth this kind of
effort ? IMO , if it wasn't worth the effort , my wife would be
cooking these butts in the crock pot . YMMV

I've smoked them in the past when I had a nice smoker but it didn't
last from 1996 to now. Jill likes to 'add' to things that the person
didn't say. Try to not get caught up in it. Shr didn't ask what size
my actual crockpot is. I only 'looks like this one' which shows the
color and dial. Mine is a 12 qt. With no trimming though a 10qt might
fit a 8lb butt. Trimmed, (aka be boned and cut ends off then put those
to the sides, probably manage to get a 10lb butt in there. We don't
need that much meat.

I cheat and use gas with wood chips.
My rub, after coating with mustard, it mostly salt, pepper, garlic,
but will add some others depending on the mood.
Sauce is a North Carolina style cider vinegar.
If you're happy with the results who am I to criticize ? I do all
my grilling with a gas unit .
My recipe is :
SnagRub
5 onion powder
2 garlic powder
1 paprika
2 salt
4 chili powder
6 brown sugar
Units of measure up to you , teaspoons or cups ... I usually do it
in tablespoons and double it because that amount fits my storage bottle .
I rinse the meat off and shake off excess moisture . Lay meat on a
piece of foil and coat all but the fat side well with rub , then on to
the smoker . I leave the foil under the meat while it's smoking .
I smoke at 200° to 220° around 2 hours per pound . It's ready
when you can pull the bone out clean .
What do you use to pull it? A couple of forks, or something fancier (and hopefully quicker)?

We're not exactly off grid , since we do have power , water , and telephone/internet . We are in a heavily wooded area which makes it a
natural to heat with wood . We also have a 250 gallon propane tank and
could use that for heat if I wanted to install a furnace . But propane
costs money , firewood costs a little for fuel and supplies , but it's
mostly labor . Which is OK , I need the exercise .

I think you missed the point. Snag is talking a 10 lb. pork
butt. Rubbed with dry seasonings and smoked. Even if you
could truly fit a 10 lb. pork butt into a 10 quart crockpot it
would not be anything like what he's talking about.

Hi Snag, note I was NOT talking a dry rub smoked deal. All I said
was I use a crockpot to make oulled pork. The generic term 'pulled
pork' doesn't indicate method of cooking. Since I specifically
said 'using a crockpot' it obviously was not the same dish. I did
not compare the dishes.

comparing mushrooms with truffles ... You toss that butt into the crockpot and walk away . I lit the fire at 8:00 , put the butt on
at around 8:45 . I was up until almost midnight getting the temp stabilized - my smoker is getting old and leaky - and finicky .
Up at 3:00 to check temps and adjust a bit , it was down to about
180°F . Up as usual at 6:15 to put the coffee on and walk the
dog - check temps again and add some more (lump hardwood)
charcoal . A couple or 3 more checks during the day while I'm
machining parts for a milling machine upgrade . I shut all vents
on the smoker around 4:30 to let it cool slowly . Now , is that slow-cooker butt worth this kind of effort ? IMO , if it wasn't
worth the effort , my wife would be cooking these butts in the
crock pot . YMMV
I've smoked them in the past when I had a nice smoker but it didn't
last from 1996 to now. Jill likes to 'add' to things that the
person didn't say. Try to not get caught up in it. Shr didn't ask
what size my actual crockpot is. I only 'looks like this one'
which shows the color and dial. Mine is a 12 qt. With no trimming
though a 10qt might fit a 8lb butt. Trimmed, (aka be boned and cut
ends off then put those to the sides, probably manage to get a 10lb
butt in there. We don't need that much meat.
I see your point about comparisons ... and we don't need that much
meat all at once , I portion and freeze it for later . 10 ounces make
2 very nice sandwiches .

unfortunately we also had several younger (the age ranged
from mid 30s to 50s) friends that also died from the virus. no
preconditions either for them. the saddest part is that some
of them were health care folks who were on the front line trying
to help people but they had no treatments at first and were
having to try to learn it as they went.

i also need the exercise but heating with wood doesn't
work for us. both of us have no tolerance for smoke of
any quantity, plus i really should not mess around with
chainsaws and axes. so i limit my exercise to the gardens
and shovelling snow and hiking once in a while if i can
actually get away.
i do use a pair of loppers and a limbing saw to cut
some small stuff down but generally i have to leave the
big trees to the people with the right equipment.
most trees here i'm willing to let live and die in
their own way. i think that leaving some standing dead
wood is worth it because it does provide food and homes
for various other creatures.

the key is not using a tomato sauce on the crust but
using bbq sauce or some other light sauce or no sauce
at all.
i always like a lot of onions so those go really well

when it's not cold enough for a fire and for when we're out of town
during freezing weather . It's either too warm or not warm enough and
the temps are not uniform in the main part of the house (it's
basically one big room living/dining/kitchen) . The wood stove
maintains a uniform temp except for the bedroom , which we like cool
anyway .
