• Return of a cooking show

    Found that CBS kids weekend is carrying "Recipe Rehab". It was
    available for a while via over the air broadcast TV, then disappeared.
    But now it's back.

    Basically two "chefs" take a family's favorite meal and rehab it to be
    lower calorie and healthier. This week they reimagined "Chicken and
    Waffles". The better recipe was "Crispy Chicken Whole Wheat Waffles and Vanilla Agave Syrup" and the second place recipe was "Waffle Chicken
    Skewers With Maple Cashew Dipping Sauce".

    It's fun to watch, but those ingredients aren't in our pantry and not
    likely to be available locally.

    You'll never find raw cashews and the creators of that recipe didn't,
    either. It's a quibble, but "raw" cashews have been orasted once,
    and "roasted" cashews have been roasted twice.

    My kids love that when we go to Huckleberry's. I'm not a fan of fried
    chicken, and adding syrup to it turns my stomach.

    Waffles are a specialty of mine though, but I really need a much more
    expensive waffle iron, I haven't had a lot of luck with the last couple semi-cheap ones I bought as compared to the "golden waffle" ones that
    were in a couple hotels we've stayed, but I digress.

    I don't think whole wheat would taste very good as a waffle. Probably
    the healthiest I've made were Almond Flour Waffles. They're a bit
    coarse and heavy and my wife doesn't like them, but I and the kids did.

    Here's my recipe for four:

    Mix dry first:
    2 & 1/2 cups almond flour
    1/4 cup malted milk
    2 teaspoons baking powder
    2 handfuls of crushed pecans
    1 teaspoon(just a spoon) of Monkfruit sweetener (or whatever sweetener
    you want to taste, but Monkfruit is best)
    2 tsp Ground Nutmeg
    1/4 teaspoon salt

    Mix in wet:
    1/4 cup coconut oil
    2 teaspoons vanilla extract
    3-4 oz (1/2 container) Yoplait Vanilla Yogurt
    1/2 Cup Milk
    4 large egg yolks

    Fold in:
    4 large egg whites beaten separately until fluffy (not quite meringue.)

    Cook as normal for waffles (about 2 minutes per side)
