    Yesterday's fare was:

    Breakfast: oatmeal
    Lunch: grilled salmon preceded by a salad and accompanied by a mix
    of carrots, broccoli, and cauliflower.
    Dinner: a salad with grilled chicken breast on it.

    All in all, a very satisfying day.

    Well, I suppose so if I had any russet potatoes on hand and a thawed pound of bacon as well. Then I could have spent at least an hour baking those spuds, frying bacon, hollowing out the taters, chopping the cooked bacon, and back into
    the oven. So, I guess I was fortunate I had picked up the family size box of these
    last week in the frozen food section for several meals and ready to eat in about
    25 minutes. $6.99.

    potatoes I used a few of them and the rest sat in a bin on the floor of
    the pantry. Out of sight, out of mind. They got soft and sprouted like
    crazy. I don't like wasting food so I don't buy bags of potatoes.

    muffing pan and frozen.  The other two are consumed that day and in the
    next day or two.

    Cook once, eat 8 times.  I do things like that often.

    I followed your tip except that I don't yet have a silicone pan. So
    I used parchment paper cups in a muffin pan. I've been looking for a
    silicone pan since then but have yet to find one. I know, I know, I
    could use Amazon but don't feel inclined.
    As it happens, some years ago I ordered a silicone pan for "Canelés
    de Bordeaux" and it was stolen in transit, I reckon it was the delivery

    We are potato people. I just ran out of a five pound bag today and put
    it on the list. There are a million things to do with potatoes, but I
    usually do mashed.
    I used to hate making mashed with a meal, because they had to be prepped
    at the same time as everything else. Then I saw, or was shown, the
    light.
    Now, I make them in the morning, put them in a shallow casserole, cover
    them with shrink wrap and chuck them in the fridge. When the time comes,
    I throw them in the microwave for about four minutes.

    I'll be doing that tonight when this is done.

    muffing pan and frozen.  The other two are consumed that day and in the
    next day or two.

    Cook once, eat 8 times.  I do things like that often.

    I like those large silicone muffin pans for things like that! :)

    It's Pyrex. I bought it many years ago at the grocery store, and a rack
    of pork ribs fits into it perfectly after cutting into three-rib chunks.
    I have a bigger, clear Pyrex roaster that will fit a slab of beef ribs.
    I'm not sure if "roaster" is the correct term for this type of
    glassware.
    At any rate, it's 250F for four and a half hours in the covered Pyrex.
    That's how I do ribs. :)
