The light frying definitely improved them. I'll remember the lemon pepper next time, too, which has more flavor than just a squeeze of lemon.

rescue these fish sticks, thus the light, very light frying and the

There's no such thing as an acceptable fish stick. It doesn't matter
if it's minced or non-minced. It'll always have a weird mushy, pasty, texture. I cooked up some frozen coconut shrimp in our new air fryer.
It turned out pretty good.

Hi Jill, I was talking cold fries from McDonalds or Rally's (or Don's
bar etc.). You can also do the frozen ones.
Lots of people use an air fryer to reheat things. Pizza comes up from
time to time but mines too small to have the base of the basket hold a
slice. I'd have cut the pizza slice in half and by then, I just use
the microwave.

Yeah, McDonald's or Rally's fries usually have to be put in a
steamer or (for me) the double boiler for a good re-heating.
That's also how I re-heat fried rice and Egg rolls from Asian restaurants.
bowser, how the hell would putting seasoned fries in a steamer or
double boiler make fries any good? BTW, she's talking frozen
fries with the brand name of Checkers, not leftover fries she
bought at a fast food joint.
Try an air fryer. Works very well.

Hi Jill, I was talking cold fries from McDonalds or Rally's (or
Don's bar etc.). You can also do the frozen ones.
I have used mine to heat up and crisp up fries... and fish. When I
get take out fish and chips they cool off a bit and get a little
soggy even on the short drive home. I stick them into the air fryer
for a couple minutes and it rejuvenates them.
Lots of people use an air fryer to reheat things. Pizza comes up
from time to time but mines too small to have the base of the
basket hold a slice. I'd have cut the pizza slice in half and by
then, I just use the microwave.
I used mine almost every week to reheat pizza. I can get two slices
into mine. I preheat it for about two minutes and then cook them for
four minutes and they turn out nicely, nice and hot without
petrifying the crust.
