No idea what all of the ingredients are, but they sure look good in the
end. I like the big knife too.

Love the giant plate too. It's perfect for my dinner.

That was a cool knife. There was some ground meat, some hot peppers,
more peppers, onion and parsley. I imagine the herbs and spices where
mint, cumin, maybe sumac , salt and pepper. It looks like a pounded out
flank steak and cheese <?>, but wouldn't the cheese run out as the
kebabs cook? I'd certainly give it a try.

    It's animal fat.

That's interesting. I have never seen animal fat sliced like that. I
suppose that it would impart some favour on the tough steak and then do aromatic wonders when it drips into the coals. I'd certainly try those.

Those are about the oddest kebabs I've ever seen! Stuffed with ground
meat, cheese, herbs & spices. The "big knife" works like a mezzaluna
except it doesn't have a handle on each end.

But some cheeses are lower in fat than others.

Depends where they're from. Ground lamb, peppers, parsley, red onion,
spices. Allegedly, the sheet of white stuff is camel fat.

Some of the commenters think it's adana kebab. None of the recipes
I've found mix in so many things; however, some of those ingredients
figure in the serving suggestions: https://www.anediblemosaic.com/adana-kebab-recipe/

I'm going to the supermarket tomorrow. If they have camel fat, I'm
getting some to try the recipe.

You might have better luck near Detroit.

There's a guy in the Caucasus of Russia that I sometimes view his cooking videos. Once, he and his buddies cooked a small camel several different ways. The consensus was it was delicious; even better than the ostrich they had prepared previously.

If it was better than ostrich it would be pretty good. I had ostrich
once and it was good eating. It was similar to beef tenderloin.

    Probably only rendered camel fat.
