    I should cook up some spare ribs soon. It's tasty and easy to make. Fry the spare ribs in oil and then add sugar. The sugar gets fried with the meat and caramelized until the color is right. Then you can add the water, Chinese wine, ginger, black bean
    sauce, some garlic if you want. The spareribs are braised in the sauce for around 20 minutes - covered. Uncover and reduce until the sauce is thick and glossy. Lastly, add some vinegar. I like to use balsamic.

    Beats having to drink the Chinese wine.
