How do I stop that, i.e. have Outlook just open one window?

    Thanks.

Easy, if you are opening from the task bar, unpin the shortcut. Then click on the start button scroll down to Microsoft Office, left click it and select outlook 2007, you will see an arrow to the right... right click on it and select open file location.
right click on Microsoft outlook 2007and select create shortcut, choose descktop location then close the window. your shortcut will be on your desktop and it will work fine, even if you right click it and pin it to your task bar.
