    If you're running Bullseye from that external HD, I'd suspect the external HD's power supply. Who made it? When? When was that HD made? How many hours are on it?
    smartctl -x /dev/sdb will report its power on hours.

    Which Debian is installed? When were updates last applied?

    When was its hardware made? What hardware is included?

    Actually /dev/sdb is an mSata drive. Here's output of smartctl:
    ...
    9 Power_On_Hours -O--C- 100 100 000 - 15975
    12 Power_Cycle_Count -O--C- 100 100 000 - 69

    Reasonably low use. I don't see a date of birth in the data.

    The laptop is 10 years old. Its power supply could be getting tired. Are you running it off house current when it crashes? Is the battery competent?

    What's on the other drive? Is it something you can't get to crash?

    Is the cooling path clean? Could something be overheating?

    sudo journalctl

    You may limit logs to specific boot by adding option like "--boot=-1".
    Scroll to end [G] or add "--end" flag to see last messages before crash, however it is better to pay some attention to all errors.
