Using UTF-8 doesn't 'convert' the quotes. I end up getting the wrong
type of quotes when I paste.
I think the dashes are ok.

I was thinking, is there a flexible program which monitors the
clipboard and does the conversion on the fly?
I see such programs which converts character sets - but they all seem
to have hard-coded conversions and don't allow the user to enter in
their own conversions for just the few characters I need.
