HDD's partition as old HFS+? I still want this old FS to be backward compatible with older
Macs like 2008 and 2012 MBPs. Do I need to use an old Mac to do this? :(

Montereys Disk Utility can format HFS+, so I guess Big Sur can as well.
Did you select "show all devices" from the little menu in the top left corner?
I guess it says "ony volumes" for you.

I'll check again later. I wanted to reformat an old HFS+ partition, but
it only gave me APFS options.
