Apple has released iPadOS 14.8.1 and 15.1 with about a dozen security fixes.

Annoyingly the iPad's Software Update allows installing 14.8.1 with
upgrading to 15 as an option, but iTunes (after insisting on an update
of that) on the MacOS High Sierra only shows the 15.1 upgrade. :-\

    the Mac's faster Ethernet connection.

Yup, especially with the newer wifi tech. Even my past ones were fine if
they were close to each other.

    Same in Big Sur's Finder.

    Do it over wifi.

Yup, especially with the newer wifi tech. Even my past ones were fine if
they were close to each other.

also, the limiting factor is the isp, not wifi/ethernet, unless someone
has gigabit or better service, and he does not have anything close to
that, and if apple can saturate it, which isn't always guaranteed.

True, but the OP was using a network cable which assuming is fast and
    stable.

which connects to the internet at nowhere near gigabit speeds.

It sounds like his wifi setup isn't good. Or maybe too far
    during the updates.

    or that he's clueless.
