Is there a setting that sendmail is not replying to the “delivery notification” request, but forwards it to the next server?

No, there is not a setting. That's not how DSNs / MDNs work.

Delivery Status Notification (a.k.a. DSN) messages are supposed to be
sent by the last server in the delivery chain. -- They are not sent by
    each hop along the path.

Note: Not all servers support (either capability and / or setting)
DSNs. In that case, the server handing the message to the uncooperative
server is responsible for sending the DSN.

Message Disposition Notification (a.k.a. MDN) messages are sent by the recipient's MUA.

Note: Not all MUAs support (either capability and / or setting) MDNs.
