    Hi! Just curious if there is any information being
    stored with regards to visits, logs, behaviors
    and so on. (being that the ssh server is being
    controlled by someone and so on)

    I'd be surprised if no logging at all was the policy. If you are concerned about leaving breadcrumbs you could use Tor:
