    Title: Red Potato Salad w/Bacon
    Categories: Potatoes, Pork, Vegetables, Herbs
    Yield: 10 Servings

    2 lb Tiny new red potatoes;
    - scrubbed, quartered
    1 ts Salt
    1 1/2 c Mayonnaise
    2 ts White vinegar
    2 ts Yellow mustard
    1/2 c Sliced celery
    1/4 c Sliced green onions
    1/4 c Chopped Dilled Quick Pickles
    - (separate recipe)

    1/4 c Dill pickle relish
    2 tb Snipped fresh parsley
    2 tb Prepared horseradish
    4 lg Hard-cooked eggs; chopped
    4 sl Bacon; crisp-cooked, coarse
    - crumbled
    1/2 ts (ea) salt & ground pepper
    Lettuce leaves (opt)

    In a large saucepan combine potatoes, the 1 teaspoon
    salt, and enough water to cover. Bring to boiling; reduce
    heat. Simmer, covered, about 20 minutes or just until
    tender. Drain well; let cool slightly.

    Meanwhile, for dressing, in a large bowl stir together
    mayonnaise, vinegar, and mustard. Stir in celery, green
    onions, pickles, parsley, and horseradish. Add potatoes,
    eggs, bacon, the 1/2 teaspoon salt, and the pepper. Toss
    gently to coat. Cover and chill for 6 to 24 hours before
    serving.

    To serve, if desired, line a serving bowl with lettuce
    leaves; spoon potato salad into bowl.

    Makes: 10 servings
