    Title: Jerk Chicken & Pineapple Slaw Wraps
    Categories: Poultry, Vegetables, Fruits, Breads, Chilies
    Yield: 6 Servings

    3 Heads baby bok choy; trimmed
    - thin sliced
    2 c Shredded red cabbage
    2 c Chopped fresh pineapple
    2 tb Cider vinegar
    5 ts Packed brown sugar
    1 tb All-purpose flour
    1 tb Jamaican jerk seasoning
    4 (6 oz ea) skinned, boned
    - chicken breast halves or
    - thighs
    Nonstick spray
    6 (12") whole grain wraps or
    - flour tortillas

    For pineapple slaw, in a very large bowl combine the
    first three ingredients (through pineapple). Combine
    vinegar and 2 teaspoons of the brown sugar. Drizzle over
    bok choy mixture; toss to coat.

    In a plastic bag combine remaining 3 teaspoons brown
    sugar, flour, and jerk seasoning. Add chicken, shaking to
    coat.

    Coat a grill pan with cooking spray; heat over medium
    heat. Add chicken; cook 12 to 15 minutes or until done,
    turning once. Transfer to a cutting board; slice chicken.
    Serve chicken and pineapple slaw in wraps
