    Title: Good King Henry Soufflé

    Yield: 6 Servings

    Butter; for the pan
    600 g Good-king-henry *
    Salt
    6 lg Eggs
    120 g Butter
    1 pn Nutmeg (freshly grated)
    200 g Fresh grated Emmentaler
    - cheese (or gruyère)
    75 ml Whipping cream
    4 tb Creme fraiche cheese
    3 tb Pastry flour

    * This herb is rich in iron and vitamin C. When cooked,
    this plant can make a good substitute for spinach but
    can be used raw as with a bitter taste. Apart from the
    leaves, the shoots can be used and cooked in a similar
    way to asparagus.

    Butter a springform pan and sprinkle with breadcrumbs.
    Set the oven @ 350ºF/175ºC

    Rinse Good King Henry, trim and blanch in a pot of
    salted water. Remove Good King Henry from pot and chop
    coarsely. Separate eggs. Beat softened butter with egg
    yolks and nutmeg until fluffy. Add Good King Henry to
    egg yolk mixture. Then alternately stir in grated
    cheese, cream and creme fraiche. Beat egg whites until
    stiff. Fold egg whites and flour into Good King Henry
    mixture and season with a pinch of salt. Pour mixture
    into the prepared springform pan and bake 30-40 minutes
    in the oven until golden brown. Serve immediately.
