    Title: Shrimp & Pineapple Lettuce Cups
    Categories: Seafood, Fruits, Herbs, Greens
    Yield: 4 Servings

    1 lb Fresh peeled, deveined
    - cooked shrimp
    1 1/2 c Chopped fresh pineapple
    1 c Chopped red sweet pepper
    1/2 c Snipped fresh cilantro
    2 ts Toasted sesame oil
    Salt & black pepper
    1 Head Boston or Bibb lettuce;
    - leaves separated

    Coarse chop shrimp. In a medium bowl stir together
    shrimp, pineapple, sweet pepper, cilantro, and oil.
    Season to taste with salt and black pepper. To serve,
    spoon shrimp mixture into lettuce leaves.

    Makes: 4 servings
