    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Minty Grilled Chicken
    Categories: Poultry, Herbs, Citrus, Chilies
    Yield: 4 Servings

    1 1/2 lb Skinned, boned chicken
    - pieces
    1/2 c Loose packed fresh mint
    - leaves; fine chopped
    3 tb Lemon juice
    2 tb Olive oil
    1 tb Minced garlic
    1 ts Smoked paprika
    1/2 ts Kosher salt
    1/4 ts Ground black pepper

    Place chicken in a resealable plastic bag set in a
    shallow dish. Add mint, lemon juice, oil, garlic, smoked
    paprika, salt, and pepper. Seal bag; turn to combine
    ingredients. Marinate in the refrigerator for 30 to 60
    minutes.

    Remove chicken, reserving marinade. Grill the chicken on
    the rack of a covered grill directly over medium heat for
    15 to 18 minutes or until done, turning and brushing with
    reserved marinade halfway through grilling.

    FROM THE TEST KITCHEN: Serve with grilled asparagus and
    top with additional mint.

    Makes: 4 servings
