Title: Sesame Garlic Beef Tacos

Yield: 4 Servings
8 Corn tortillas
1 lb Ground beef
2 tb Toasted sesame oil
2 cl Garlic; minced
1/2 ts Crushed red pepper
1/4 c Reduced-sodium soy sauce
3 tb Packed brown sugar
3 tb Rice vinegar
1 tb Water
Lime wedges
Asian chile sauce
- (Sriracha)

1/4 c Rice vinegar
2 tb Granulated sugar
1/2 ts Salt
1 c Halved and very thin sliced
- cucumber
1 c Shredded red cabbage
In a medium bowl whisk together vinegar, sugar, and salt. Add cucumber
and cabbage. Stir to combine. Let stand at least 15 minutes or up to 6
hours. Serve with a slotted spoon.
Set oven @ 350ºF/175ºC.
Stack tortillas and wrap in foil. Heat tortillas in oven 10 minutes.
Meanwhile, in a large skillet, brown ground beef over medium-high
heat. Drain fat and set beef aside.
Add sesame oil to skillet. Add garlic and cook for 30 seconds over
medium heat or until lightly browned. Stir in crushed red pepper. Stir
in soy sauce, brown sugar, rice vinegar, and water. Bring to boiling.
Reduce heat and simmer, uncovered, 5 minutes, stirring occasionally.
Return beef to skillet; heat through.
To serve, spoon beef onto tortillas. Top with Quick Pickled Cucumbers
and Slaw. Serve with lime wedges and chile sauce.
Yields: 8 tacos
